Creamy Quesadillas

Ingredients:
- 1 cup ricotta cheese
- 1/4 cup crumbled feta cheese (or gruyere cheese)
- 6 oz shredded mozzarella
- 3 Tbs finely chopped parsley
- Salt & freshly ground black pepper
- 1 jalapeno pepper, seeded & chopped, optional
- 6 small flour tortillas, cutin half
- About3 Tbs vegetable oil
- 1 cup salsa
Directions:
- Preheat oven to 400 deg F.
- Stir together the cheeses, parsley, salt & pepper, and jalapeno
pepper, if desired.
- Spread filling onto each tortilla half; fold over & press
down.
- Brush each side with oil; bake for 5 minutes on each side, until
crisp.
- Let cool slightly; serve with salsa.
