Tofu, Sauce
& Veggies
Yield: 2-4 servings

Difficulty Level: Easy
Ingredients:
- 1 package of Tofu (get the kind that is fortified with calcium)
- Sauce - either buy a marinade or make your own:
- 1/8 cup low-sodium soy sauce or tamari
- 1 1/2 Tbs minced fresh ginger or 1 tsp ground
- 1 tsp sesame oil
- 2 Tbs very thinly sliced scalions
- 1/2 tsp Chinese chile paste or hot pepper sauce, optional
- 1 Tbs vegetable or peanut oil
- 1 Tbs butter
- Veggies (cooked as you like them)
- Rice (cooked as you like)
Directions:
- In parallel:
- Prepare veggies
- Prepare rice
- Mix soy sauce, ginger, sesame oil, scallions, chile paste
& toss well. Mix with tofu (chopped into 3/4 inch cubes).
Let marinade at least 15 minutes or up to 24 hours in the
fridge. Heat the vegetable or peanut oil in a large skillet
over moderately high heat. Remove the tofu from the marinade
and reserve it. Add teh tofu to the hot oil and cook about
6-7 minutes, or until the bottom is brown. Then turn over
and cook another 5 minutes. Add the reserved marinade and
butter to the skillet and let cook on high heat for another
1-2 minutes.

Comments:
- This recipe came from Parenting magazine. It actually suggest
using chicken breast halves (boneless). But we prefer tofu.
